Kawamuki ( 皮剥き)
- Literally skin peeling knife. Small knife, with approximately 90mm long blde, used for peeling and garnishing. Blade geometry is similar to the Kamagata Usuba.


  • Typically a Single Grind knife.
  • Common Blade Length - 90-120mm(3.54-4.72")
  • Blade Length Range - 75-135mm(2.95-5.31")
