N360(Bohler-Uddeholm) - Stainless steel, with medium Carbon content, quite stain resistant. Main highlight being 0.42% Nitrogen in it. Overall, quite decent performance for a western kitchen knife, but some of the knives I've seen using this steel were very high priced, IMHO the steel isn't that good of a performer to justify 1000$ or higher price.
