Last night had to cut salad. A lot of it as usual. First I've picked up 270mm Aritsugu A-Type Gyuto, but then rehandled Tadatsuna gyuto caught my attention. It's been soooo long since I have used it, in 04/09 its handle became a bit loose and I was both, disappointed and frustrated with that. So, it was banished from the kitchen, until the final decision was made. The decision was made to replace the handle which was completed in 10/09. The knife clearly needed sharpening, even if it could shave hair in either direction, the level wasn't satisfactory. I still decided to use it. It's the thinnest gyuto I have, and it's been a long time. New handle is much better than the old one, and gives the knife whole new feeling. Overall, it's a very good performer as far as cutting goes, but lacking a bit in the edge holding department, compared to Arigsutu or Watanabes...I'll update review soon.

Yep, those are the two knives I've mentioned in last Friday's post. CPM 3V and 154CM Nimravus. Both worked superbly for cardboard cutting, and 154CM blade even if it was 62HRC had absolutely no problems with wood whittling. Later I did manage to chip it on RCA cable when I was trying to determine what it'd take to cause the chipping. So, that was it. Details later.

I've skipped vista and it was a good thing to do :) SO far Win 7 seems to be a good one. Except reinstalling all the software is more than a day's work...

Sharpened newly received reground Nimravus, that was a full scale work. Started with 500 grit Beston whetstone, moved to 700 grit Bester, followed up with 1200 grit King whetstone, then my new 3000-5000 grit synthetic Aoto, followed by 5000 grit Naniwa and finished with 10000 grit Naniwa finishing synthetic whetstone. Touch-ups on the Watanabe Kuro-Uchi Sakekiri, Shigefusa Kitaeji Moroshi Deba, Watanabe Pro Miroshi Deba, Watanabe Kuro-Uchi Nakiri and Sanetsu ZDP-189 Gyuto. Now for the leather strops, 0.5 mic, 0.25mic and plain leather. Busy day...

Actually they arrived yesterday, but I was working long hours and then forgot to check the box. Saw them this morning. Man! Talk about high performance package. Numero uno - the custom CPM 3V steel utility knife which is 62HRC, 1.25mm thick and cuts probably better than a razor. Second is the Benchmade Nimravus, 154CM steel rehardened by Phil to 62HRC and he also did the regrind job, flat grind. I have not used either one yet, but it is clear both will be superb light cutters, if the 154CM steel can hold up at 62HRC.

Added several new types, fixed descriptions and kanji for the existing ones. Working on the new photos and new types. That is sent emails to couple Japanese makers, waiting for their response.

just got Shun Chukabocho, honesuki and Henckel Miyabi knives for sharpening. All three have pretty messed up edges, chukabocho apparently was used as a meat cleaver, the other two are slightly better, but really messed up anyway. Microscope pix and sharpening this weekend.

Enter is processed by graph form to execute submit action. Unfortunately the bug in JS code intercepted Enter key event even if the user typed new URL in the address bar and thus prevented the user from going to another page. All ok. now. If you type the new address in URL bar it will work as it's supposed to. Inside the graph Enter is still handled properly and executes new form generation request.

Today's additions are: Uddeholm Chipper, S590, S790, K890, Dorrenberg-Edelstahl PMD M4, PMD23, PMD30, PMD60 and Carpenter Technology Corporation's - Carpenter M42, variation on M42 theme so to speak. I think I'll start combining records for the identical AISI steels and specify ranges manufacturers allow. Doesn't make much sense to have few records for A2 or S7...
